This baked harvest bowl was the perfect dinner to create easy leftovers for the next day! It only includes a few minutes of prep work to get everything in the oven. Once everything is in, you can get back to your favorite TV show as you wait for it to roast!!
IN THE BOWL:
Quinoa- cooked on the stove for 15-20mins.
Roasted sweet potatoes
cut 1 sweet potato into 1/2 inch squares. cover with olive oil, salt and pepper and lay flat on baking sheet. bake in the oven with for about 1 hour.
Roasted Brussel sprouts
cut brussel sprouts in half. toss with olive oil, salt and pepper. bake in the oven for about 1 hour.
thinly slice raw chicken breast and law flat on baking sheet. Cover with olive oil, salt, pepper and curry spice. bake in the oven for about 10 minutes.
you could sub any cheese here!
Chopped cherry tomatoes
**1/2 - 1 cup each ingredient.
