Roasted Romenesco

I eat predominantly paleo and often get stuck in food ruts eating the same things everyday. When I catch myself doing this, the first thing I try and switch up is my vegetables! Romenesco is one of my favorite veggies if you can find it in the store! It's a cross between broccoli and cauliflower and tastes like a blend of the two!


Below is my go to recipe for roasted romenesco! Give it a try and let me know if you like it!


1 cut up 1 head romenesco, 1 yellow onion and 3 cloves garlic. Throw in baker dish.

I love onions and garlic so I often use lots, but this part is totally optional and based on you!

2 add salt, any seasoning, and olive oil. I used a ‘potato’ seasoning i found in the supermarket.

3 put in pre heated oven @400 degrees F until nice and crispy. Stir up the veggies about 20 minutes in.

I let them roast about 40 minutes, though i like all my veggies slightly burnt! If you're not into this, just take the veggies out a bit sooner!








I served with roasted chicken breast and avocado. It was delicious and easy!
